Casentino sheep's milk has always been famous. The animals are pastured in secluded valleys and on the mountains, on lands that in the main has never been intensely cultivated. The grass eaten by the animals is therefore rich in variety and aromatic with herbs.
This Talla cooperative processes the fresh milk to make tasty Pecorino cheese rounds and exceptional Ricotta. Pecorino is matured in the traditional manner, wrapped in grape or chestnut leaves or buried in ash. The Cooperative offers a selection of fragrant cheeses flavoured with truffles, Cayennne pepper or aromatic herbs.
